White rice — how to get it right
1.1 for new-crop rice, 1.3 for older rice
By the knuckle method, level the rice out and add water until it just covers your knuckle, about 1.5cm — that is normal white rice. It depends heavily on the diameter of the pot, so it is only reliable when you always use the same one.
Rinse the rice, drain it in a sieve, then measure — wet rice has already taken on water.
