An even split is not always a fair split
Dividing the total by the number of people works fine when everyone ordered about the same. It stops working the moment one person adds a bottle of wine or orders the most expensive dish — dividing that in equally means someone else pays for it. Extra items fix that: add them once, and only the person who ordered them (or the whole table, your choice) covers the difference.
Two ways to add an extra item
Assign it to one person and it comes entirely out of their share. Assign it to everyone and it is split evenly on top of the base amount. A round of drinks the whole table shared goes to everyone; a taxi one person took home alone goes to that person only.
